Stiff dough starter pain au levain, from
Local Breads, with a mixture of soaked seeds (cornmeal, sesame, flaxseed, wheat berries). The seeds had a strange bleach-like smell when I uncovered them, but it didn't translate to the finished bread, which rose beautifully. Finally learning to trust my sourdough even when it doesn't poof up when rising.
