Here it is. At last. Cool, creamy, coconutty, with a crust of vanilla cake crumbs and coconut. I made three minis, two of which have sold at the bakery already.
The little taste I sneaked from the inside of the rings was very good. I didn't have a lot of luck with keeping the water bath entirely out of the tinfoil, but there's always a next time. Next up, Genoise Rose.
